Breton Crêpes

1 litre milk
500 grams fine flour
8 eggs
100 grams sugar

Heat frying pan to medium high heat spread very thin and cook until light brown. Eat for breakfast, dessert or supper on Shrove Tuesday. (Although the Bretons usually eat them for dessert). Eat with something sweet such as Nutella or lemon and sugar.


Breton Galettes

250 grams buckwheat flour
pinch of salt
Half a lire of water
40 grams melted butter

Mix well and then let the batter sit for 1 or 2 hours. Cook the same as crêpes, try to spread as thin as possible. Eat for lunch or supper with something savoury such as sausage or egg.

Foie Gras

1 fatty goose liver

Ramis' Camel Safari Vegetable Pakora

Ingredients:
veggies: green pepper, onion, green onion, potato
chick pea flour
spices: corriander, cumin, tumeric, salt, garam masala, pepper to taste

Roughly chop veggies and place in a bowl. Add chickpea flour and ground spices. Add a little water and mix with your right hand. The consistentcy should be a bit like a chunky muffin mix. Finger drop chunks into hot oil. (teaspoon sized but irregular shaped) Deep fry until golden brown. Scoop out, serve and consume. Mmm.

Chai

I have had a request for a chai recipe. I don't have a recipe, but I will describe what I see being done here and you can check on the internet for more details.
Heat milk until it starts to froth (just to boil).  Add loose black tea (not big leaves but tea dust). Grate fresh ginger, crush cumin and cardomum and toss into the hot milk. Add sugar, about 2-3 teaspoons per serving. It should be sweeter than you would otherwise dare. Stir then pour through a strainer. Then pour from one receptacle to another from a hight to encourage frothing and cooling.
On our camel trek, where no fresh cows milk was available, our guides used powdered skim milk with great success. It was not like the instant stuff from Superstore but more the consistency of flour. My mom used to buy it in Quebec. It dissolves in hot water without those little white floaties that you get with the instant milk powder.
